Chicken Salad Croquettes

Ingredients:

  • 2 1/2 cups of store-bought, well-seasoned cooked chicken, skin removed and torn into pieces
  • 2 stalks celery, finely chopped
  • 1 green pepper, finely chopped
  • 1 small sweet onion, finely chopped
  • 1 cup mayonnaise
  • 1/3 cup sour cream
  • 1 1/2 teaspoons each of black pepper, garlic powder, dill, parsley, and chives (optional)
  • 1. Teaspoon seasoning salt
  • 2. Hard-boiled eggs, chopped
  • 2 tablespoons sweet relish

Instructions:

  1. In a large bowl, combine the chicken, celery, green pepper, onion, mayonnaise, sour cream, black pepper, garlic powder, dill, parsley, chives, seasoning salt, chopped eggs, and sweet relish. Mix well.
  2. Refrigerate the mixture for at least one hour to allow the flavors to meld.
  3. When ready to cook, stir in 1 cup of flour and 1 large beaten egg until well incorporated.
  4. Shape the mixture into patties.
  5. Heat oil in a frying pan to 350°F (175°C).
  6. Fry the patties until they are golden brown and crispy, about 3-4 minutes per side.
