Chicken Salad Croquettes

Ingredients:
- 2 1/2 cups of store-bought, well-seasoned cooked chicken, skin removed and torn into pieces
- 2 stalks celery, finely chopped
- 1 green pepper, finely chopped
- 1 small sweet onion, finely chopped
- 1 cup mayonnaise
- 1/3 cup sour cream
- 1 1/2 teaspoons each of black pepper, garlic powder, dill, parsley, and chives (optional)
- 1. Teaspoon seasoning salt
- 2. Hard-boiled eggs, chopped
- 2 tablespoons sweet relish
Instructions:
- In a large bowl, combine the chicken, celery, green pepper, onion, mayonnaise, sour cream, black pepper, garlic powder, dill, parsley, chives, seasoning salt, chopped eggs, and sweet relish. Mix well.
- Refrigerate the mixture for at least one hour to allow the flavors to meld.
- When ready to cook, stir in 1 cup of flour and 1 large beaten egg until well incorporated.
- Shape the mixture into patties.
- Heat oil in a frying pan to 350°F (175°C).
- Fry the patties until they are golden brown and crispy, about 3-4 minutes per side.
