Healthy Cauliflower Pizza with Veggies

Ingredients:

  • 1 head cauliflower, grated
  • 1 cup shredded mozzarella cheese
  • 1/4 cup grated Parmesan cheese
  • 1/2 cup tomato sauce
  • 1 cup mixed bell peppers, sliced
  • 1/2 cup red onion, sliced
  • 1 cup fresh spinach
  • 1 egg, beaten
  • 1 tsp dried oregano

Instructions:

  1. Prepare the Oven: Preheat your oven to 425°F (220°C).
  2. Cook the Cauliflower: Grate the cauliflower into fine pieces and microwave in a microwave-safe bowl for about 8 minutes, or until softened.
  3. Remove Excess Moisture: Place the cooked cauliflower in a clean kitchen towel and squeeze out as much water as possible to ensure a firm crust.
  4. Make the Dough: In a large bowl, combine the grated cauliflower with mozzarella, Parmesan, beaten egg, oregano, basil, salt, and black pepper. Mix until well blended.
  5. Form the Crust: On a parchment-lined baking sheet, shape the cauliflower mixture into a pizza crust, pressing it evenly.
  6. Bake the Crust: Bake for 15-20 minutes, or until the crust turns golden brown and crispy.
