Spaghetti Aglio e Olio

Spaghetti Aglio e Olio is a classic Italian pasta dish that’s quick, simple, and packed with bold flavors. Made with garlic, olive oil, chili flakes, and fresh parsley, this dish is perfect for a quick yet satisfying meal.

Ingredients

  • 100g spaghetti
  • 2 cloves garlic, thinly sliced
  • 3 tablespoons olive oil
  • 1/4 teaspoon red chili flakes
  • 2 tablespoons fresh parsley, chopped
  • Salt, to taste
  • Black pepper, to taste

Instructions

  1. Cook the spaghetti in a pot of salted boiling water until al dente. Reserve 1 cup of pasta water, then drain the rest.
  2. While the pasta cooks, heat the olive oil in a large skillet over medium heat. Add the sliced garlic and red chili flakes, sautéing until the garlic turns golden, about 2 minutes. Be careful not to burn the garlic.
  3. Add the cooked spaghetti to the skillet and toss it in the garlic-infused oil. If needed, pour in a bit of the reserved pasta water to achieve the desired consistency. Season with salt and black pepper to taste.
  4. Remove from heat and stir in the chopped parsley.
  5. Serve immediately, garnished with extra parsley if desired.
