Lamb Biryani: A Fragrant and Flavorful South Asian Classic

Ingredients:
- 500g lamb, cut into pieces
- 2 cups basmati rice, soaked for 30 minutes
- 3 tablespoons ghee or vegetable oil
- 2 onions, thinly sliced
- 2 teaspoons ginger garlic paste
- 1 cup yogurt, whisked
- 1 teaspoon turmeric powder
- 1 teaspoon red chili powder
- 1 teaspoon garam masala
- 2 bay leaves
- 3 cloves
- 4 cups water
- Salt, to taste
Instructions:
- Marinate the lamb: In a bowl, combine lamb, yogurt, turmeric, red chili powder, and salt. Marinate for at least 30 minutes.
- Prepare the onions: Heat ghee in a large pot and fry the sliced onions until golden and crispy. Remove half of the fried onions and set them aside for garnish.
- Cook the lamb: Add ginger garlic paste to the remaining onions and sauté for a few minutes. Add the marinated lamb, cooking until browned and the spices are well blended.
- Add spices: Stir in the bay leaves, cloves, and garam masala. Cook for a few more minutes to allow the flavors to develop.
- Cook the rice: Add the soaked basmati rice and water to the pot. Stir well and bring to a boil.
- Simmer: Reduce heat to low, cover, and simmer for 20-25 minutes until the rice is cooked and the water is absorbed.
- Garnish and serve: Top the biryani with the reserved fried onions and serve hot.
